Low pro sugar-pumpkin cookies
2 1/4 cups (260 grams)
Taste Connections lo pro multi baking mix
1/2 cup (1stick) butter
or margarine
1 pkg. (3.4oz.) vanilla
instant pudding mix
1/4 cup "Libby's" easy
pumpkin pie mix
1 1/2 tsp baking powder
3/4 cup (firmly packed)
dark brown sugar
2tsp dried cinnamon
2tsp dried pumpkin pie
spice
water (to make dough
stiff) approx. 1/2 cup
preheat oven 375 degrees
F
In bowl, mix baking mix,
baking powder, instant pudding, and mix with a wire whisk
add sugar, pumpkin, butter (soft), and spices and beat well
until fluffy
add mixes together add
water slowly until dough is stiff enough to roll small sized
balls, place small balls onto lightly greased (butter)
cookie sheets and bake for 12-15 min.

replace 1/4 cup
applesauce (instead of pumpkin)
do not add pumpkin pie
spice
and add 1/2 cup diced
apples and 1/2 cup dried cranberries
